Easy fluffy vegan pancakes that taste nice!

I’ve tried a few vegan pancake recipes and found most of them wanting (ie throwing in the bin). I’ve finally hit on a winning combo of fluffiness and taste. It’s also passed the ultimate test and is child-approved.

They’re a cross between a buttermilk/fluffy pancake and a traditional thin one. Lovely with fruit and coconut yogurt as well as the usual syrupy stuff.

Vegan Banana Pancakes

Easy and quick to whip up

ingredients:

  • 1 ripe banana
  • 1 1/2 tbsp olive oil
  • 1 1/2 tbsp maple syrup
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup plant milk (you might need a little more but start with 1 cup)
  • 3/4 cup oat flour (just whizz the oats in a food processor)
  • 1 cup plain flour
  • optional: choc chips, blueberries, raspberries

instructions:

  1. Mash the banana in a bowl
  2. Add the oil, syrup, baking powder and salt and whisk
  3. Add the flours but try not to over mix it. If it's too thick slowly add a little more milk until you get a good consistency
  4. Add the optional chocolate chips or fruit
  5. Heat a tablespoon of oil in a frying pan
  6. Once hot, add a heaped tablespoon of batter and repeat to fill your frying pan (I could fit 3 in at once). The batter should be runny enough to spread out into mini circles
  7. When little bubbles start to appear it's time to flip
  8. Serve with coconut yogurt, fruit, syrup
