5 Minute Dip

This recipe was originally from A Virtual Vegan but I can no longer find the recipe on the site.

The original made a hummus dip from chick peas but I didn’t have any (shock horror) so I swapped for cannellini beans and it worked well.

Equipment:

Blender or food processor, microwave

Ingredients:

1 tin of chickpeas (or other white beans like cannellini)

2-4 cloves garlic (depending on how garlicky you like it, I used 3)

1/2 cup tahini

1 juice of lemon

3/4 tsp salt

1-2 tbsp olive oil (I left this out to make it oil-free)

Method:

Empty the whole tin (liquid included) into a large glass bowl. Microwave for 5 minutes.

Add to blender along with the other ingredients, apart from the olive oil, until smooth. If you’re using it then drizzle it in slowly. Check the seasoning. Garnish with olive oil and paprika.

It tasted better after a while in the fridge as it had time to set a bit and develop more flavour.
