Tomato Puff Pizza

Ingredients:

  • 1 Jus-Rol puff pastry

  • 1 pot of vegan cream cheese (I used Koko for this - see picture below)

  • 1 small punnet of cherry tomatoes

  • 2 large tomatoes

  • A few sprigs of thyme

  • Basil

Method:

  • Oven 200 degrees

  • Open out the pastry and use a knife to score an inch margin all the way round the edge

  • Spread over the cream cheese

  • Sprinkle with thyme

  • Add the tomatoes, covering all the cheese

  • Bake 15-20 minutes

  • Add the basil just before serving
