Tomato & Red Lentil Soup


1 onion, finely diced

2 sticks celery, finely diced

1 carrot, peeled & finely diced

1 garlic clove, minced

1 tsp ground cumin

1/2 tsp ground coriander

175g red lentils, rinsed in cold water

3/4 pint veg stock (2 stock cubes)

2 handfuls tomatoes, any type will be fine

2 tsp tomato puree

Optional: add two stalks of kale (remove the woody middle bit). This boosts your daily leafy green intake


Soup maker: add ingredients, choose smooth

Hob: saute onion, celery & carrot in water. Add the remaining ingredients. Simmer 15 minutes (check the lentils are soft). Blend to smooth.
