Chickpea Tuna Wrap

This makes a good alternative to tuna mayonnaise sandwich filler

Ingredients:

2 spring onions, finely chopped

1 tin chickpeas, mashed with a fork (keep the aquafaba juice for other recipes)

1/2 cup sweetcorn

2 dollops of vegan mayonnaise (I prefer Follow Your Heart Vegenaise, use one dollop if you’re trying to lose weight)

Handful of grated non-dairy cheese (Violife is good for this but ommit if you’re trying to lose weight)

Method:

Mix all ingredients together in a large bowl. Use like you would tuna mayo. It will keep in the fridge for about 3 days.
