Minty Pea & Potato Soup


1 onion, finely diced

400g potatoes, peeled & diced into small pieces

3/4 pint veg stock (2 stock cubes)

250g frozen peas

handful of chopped mint


Add all ingredients either to the soup maker (and choose smooth) or into a saucepan. You can saute the onion in water first to soften if you have the time but otherwise chuck everything in and simmer for 18 minutes. Use a blender to make smooth.
