Fennel, orange and grapefruit salad in a yogurty dressing

A light and zingy salad

Who knows what to do with the fennel they get in the veg box delivery? I didn’t. So I went looking for something to do with it. Salad! I saw this recipe (made with dairy yogurt and honey and what have you) and adapted it for vegans. I ate it alongside glazed tofu steaks.

I can recommend this yogurt by Alpro. It’s not new, it’s the ‘Go On’ range re-branded as Greek. Lovely and thick. Amazingly it’s in Morrisons as well as the other supermarkets and on Ocado.

Yield: 2 as a side to main meal

Fennel Salad

Crisp and tangy - a mix of fennel and citrus in a yogurty dressing

ingredients:

  • 1 fennel bulb, sliced
  • 1 orange, cut into segments
  • 1 grapefruit, cut into segments
  • handful pistachios, crushed into small pieces
  • handful of the fennel bulb fronds
For the dressing
  • 2-3 tbsp Greek yogurt (my favourite is Alpro Greek Style)
  • 1 tbsp red wine vinegar
  • 1 teaspoon maple syrup
  • salt
  • pepper
  • 1/2 orange, juiced

How to cook Fennel Salad

  1. Mix the dressing ingredients first in a large bowl and season
  2. Add the fennel, orange and grapefruit, mix together
  3. Sprinkle the pistachios then fennel fronds on the top
