Oaty Snack Balls

A healthy snack that the kids actually like? One did, one didn’t. I ate 5.

Equipment: baking sheet, baking parchment, food processor, large mixing bowl, oven 190 degrees

  • 1 cup oat flour (see step 1)

  • 1 cup rolled oats

  • 1/3 cup raisins

  • 1/4 cup desiccated coconut

  • 1 tsp cinnamon

  • 1 tsp lemon or orange zest (younger child didn’t like the bits so will try without next time and add a little orange juice instead and less syrup)

  • 1/4 tsp sea salt

  • grated nutmeg

  • 1/2 cup apple sauce (or ripe pureed banana, see notes)

  • 1/4 cup maple syrup

  1. Measure 1 cup of rolled oats straight into the food processor and whizz to a flour. Add this to the mixing bowl.

  2. Add all the ingredients into the mixing bowl. Give it a good mix.

  3. Roughly a tablespoon of the mixture and roll into a ball. Pop on the baking sheet.

  4. Oven 14-15 minutes.

Cooking notes:

  • If you use banana instead of apple puree then you might not need as much maple syrup.

  • Make even sweeter by adding more raisins or 1-2 tbsps of sugar (such as coconut sugar).
