These are  a good lunch idea or as part of a Mexican feast. The filler takes a few minutes to put together but if you do as much as the recipe says it will stretch out to fill five large wraps (and one was enough for me for one day). This is from Bosh!

I left out the coriander and processed the black beans to make them more child-friendly but they both still turned their noses up at them!

I used Biona black beans (BPA free tin lining) and Violife grated cheese. I still haven't found a good vegan cheese that's not too plastic-tasting. The search goes on. The original Bosh! recipe for this uses oil. I cooked without it.
