Bosh Special Fried Rice

This is a Bosh recipe. Unusually it’s not on their YouTube channel so I can’t link to it but it’s extremely easy and the kids like it!


80g firm tofu (I prefer Tofoo as it doesn’t need pressing. I also use all of the block to bulk it out and make it last for leftovers.)

3 garlic cloves, finely chopped

2 spring onions, finely chopped

1 small carrot, finely diced

1 small red pepper, finely diced

1 tbsp sesame oil

50g peas

50g sweetcorn

1 tsp ground turmeric

1 tsp curry powder

1/2 tsp black pepper

1 tbsp brown sugar

1 tbsp dairy-free butter (I like Pure Sunflower or Pure Soya spread)

1 cup white rice, rinsed under cold water

3 tbsp soy sauce

fresh coriander for garnish


Boil saucepan of water. Add cold-rinsed rice. Bring back to boil. Give one stir round with a wooden spoon. Put the lid on. Reduce the heat to low and simmer for 12 minutes. Don’t take the lid off till the timer goes.

Pour the oil into deep non-stick frying pan/wok. Add the carrot, red pepper, garlic, spring onion. Stir fry 1 minute.

Crumble in rough pieces of the tofu. Add the peas, sweetcorn, turmeric, curry powder, pepper & sugar. Stir fry another 6-8 minutes until the veg are cooked through. Add the butter, rice and soy sauce. Mix together. Season with salt if needed (I don’t normally as the soy sauce is enough.) Serve.
